Make It Monday: Red Velvet Brownies

Yum! And did you just gain 5 pounds by reading the title. I really like red velvet cake. My grandma Purcell used to make great red velvet cake and now my Aunt Martha makes it each Christmas. I decided to make these brownies after seeing them in the December issue of Southern Living. Check these brownies out...
First, take a 9x9 pan and line it with foil. Grease it slightly. I used good ole Crisco.
Then microwave 4oz bittersweet chocolate baking bar and 3/4 c butter until melted. Stir it about every 30 seconds so you don't scorch your chocolate. It took mine around 2 minutes to completely melt together.

After melted, whisk in 2 c sugar.

You will then add, four eggs- 1 at a time. Whisk until just blended. Helpful hint, make sure your eggs are room temperature. If you have all your ingredients at room temperature when baking, it will bake more even!
Then gently stir in 1 1/2 c flour, 1 bottle red food coloring, 1 1/2 tsp. baking power, 1 tsp. vanilla extract and 1/8 tsp. salt.

After it is completely blended, pour into pan and bake at 350 degrees for around 45 minutes.
Let it cool completely in the pan for approximately 2 hours. Lift brownies from the pan using foil as handles. Then top with Cream Cheese frosting and top with either white chocolate chips or shaved chocolate. Cut into SMALL pieces, it is rich. This is so yummy and would even be nice around Valentine's Day too:) Enjoy
Red Velvet Brownies Ingredient List:
1 (4oz) bittersweet chocolate baking bar
3/4 c butter
2 c sugar
4 large eggs
1 1/2 c all purpose flour
1 (1oz) bottle red food coloring
1 1/2 tsp baking powder
1 tsp vanilla extract
1/8 tsp salt
Cream Cheese Frosting:
1 (8oz) package cream cheese, softened
3 tbsp butter, softened
1 1/2 c powdered sugar
1/4 tsp salt
1 tsp vanilla extract
Beat cream cheese and butter at medium speed until creamy. Gradually add powdered sugar and salt, beating until blended. Stir in vanilla!
